4 Cheese and italian Herb Chicken Parmesean Hero



Gadgets and Cooking needs: 1 baking pan or deep dish for your oven, 1 cutting board, 1 container or cutting board for breadcrumbs, 1 bowl for egg mixture, long cooking fork             
Ingredients:
  • Chicken Breasts, one is good for 2 sandwiches when cut into 4 pieces, fat trimmed
  • Mozzarella, I prefer uncut reduced fat Polly O Brand, no need to grate, simply slice 
  • Kraft Three Cheese Parmesan Cheese Grated
  • 1/2 a container of Newman's Own tomato sauce, here I used Marinara 
  • 1 tablespoon Philadelphia Cooking Cream Cheese with Italian Herb Seasonings
  • One egg, beaten, no salt
  • I recommend a gluten free bread, Italian or French will do, cut for your hero
  • 2 cups of Bread Crumbs, I have been using Shake and Bake because it comes seasoned in a variety of flavors such as Parmesan or Ranch, here I used Extra Crispy which is a favorite in my house
  • Fresh bunch of Parsley or your own favorite "Italian" herb such as Oregano or Basil, cut yourself  Tip: leave frozen for a longer life
Directions:  Heat up your oven to 360 degrees. Cut fresh parsley in small pieces and mix with bread crumbs and set aside  Tip: I recommend that whenever you make something breaded it should be prepared overnight or at least 15 minutes  before you cook it, so that the bread crumbs do not peel fall apart.
Combine Philadelphia cream cheese with the egg and stir completely. Dip and completely coat each chicken piece in the egg mixture, and then coat immediately in the bread crumbs on both sides, patting them lightly with a fork on each side and placing them on the baking pan, Bake for 20 minutes. if you have not prepped the breaded chicken ahead of time, do not turn it until the very end when you are ready to serve so that the breadcrumbs won't fall apart. Take out of the oven and get ready to layer your sandwich.

 During the last 5 minutes of cooking the chicken, Heat up your tomato sauce in a microwave for 1 minute & 30 sec or in a small deep sauce pot for 5 min under medium flames, and spread over your bread like you would butter as shown above. 
Add the cooked chicken, and then mozzarella cheese on opposite sides so that they don't slip and slide while your eating, add some extra sauce on top of the chicken. Finish it off with the Three cheese Parmesan Cheese to taste. Place in the oven again  for about 4 minutes or until the cheese is completely melted and the bread toasted, marrying all of the flavors. Remove from the oven, bring the sandwich together and enjoy.


I reference this Italian side of my life when cooking an Italian dish, one of my favorites being a Chicken Parmesan Hero. Sometimes the nutritional value of chicken is highly overlooked, but it is a prime choice as an indulgent food that will get my metabolism running on high. After this and many other home-made sandwiches, my fiance says I "ruined" Subways for him, which is really a good thing for our wallets and taste buds. I give this particular Hero sandwich a real punch of flavor with a 4 Cheese combination, using a Three Cheese Parmesan mix from Kraft that is sure to make cheese lovers want more with each bite. Try to find this recipe in a restaurant and you will be disappointed.
Tip on Tomato Sauce: All tomato sauce is really not created equal, and you might already have your preference, and that's great I have several as well. After tasting many different kinds, I really prefer Newman's Own as one of them because it tastes very natural with as few preservatives as possible. My least favorite is Ragu because it's the polar opposite, it taste store bought. Get creative with your choice.
