Crispy Dominican Chicken Terriaki with vegetables

Gadgets and cooking needs: Frying Pan or Wok, Deep Boiling Pot for Vegetables. 2 large stirring cooking spoons. Very quick and easy dish. No Marinading needed.
Ingredients:
  • Boneless Chicken breasts, trim the fat, cut from narrow part into slices. One breast is good for one person, or one is good for 2 people if your having a lot more vegetables than meat.
  • Vegetables of choice- I chose 1 whole Broccoli, rinsed, and cut
  • 10 baby Carrots, rinsed, removed outer layer with potato peeler and cut long in 1/2 with knife
  • 1/2 White Onions, rinsed, sliced or diced, your choice
  • 1 cup of Terriaki sauce, you choice of brand, I use Kikkoman
  • 1/4 cup Corn oil
     Heat up the pots: Bring a 3/4 of a deep pot of water to a boil, and add vegetables except onions to the pot.  (You want to keep vegetables crispy, not soggy so just be careful to not overcook it, keeping it cooking for 8-10 min. max) So while the vegetables are cooking...
    
Start working on your frying pan, adding all of the oil and setting it to a medium flame (you can test the frying oil by seeing how quickly an onion cooks and start adding the chicken pieces to the frying pan) only turning the chicken on both sides after you start seeing some toasty colors, making sure they are crispy on both sides. You will notice it turning golden brown and then the chicken is ready for the rest so lower the flames until it is off, the heat will keep it warm.
    After draining the vegetables, add all of the onions to the vegetables and mix it so that the flavors marry a little. (No need to add salt or oil to the vegetables the chicken dish provides plenty)
    Remove all of the oil from the frying pan since this is a healthy dish, and then marry the vegetables to the chicken in the frying pan or wok stirring it as you are pouring the Terriaki sauce, and setting the flames to low medium this time. After you have completed combining all of the flavors and tasted the dish for crispiness and salt, serve with your choice of sides, here, it is served with my own white rice recipe. I cook the rice in a rice cooking pot so it's easy to do it first, set it and forget it, just stirring a few times.

This is a wonderful and healthy and metabolic meal  for lunch or dinner. If you should try finding this crispy Dominican style/Asian Dish Recipe in your local restaurant, you will be dissapointed to find it is not cooked the same.

I like to have my meat toasty and crispy, whereas Asians tend to cook this particular dish just enough; I go all the way and turn it into a "Chicharon" (Spanish for: really fried and toasty meat.)What I also really enjoy about making it myself is that I get creative and add other vegetables besides just broccoli, almost any will do. So not only do I get more "bang" for my buck, but I also have it my way. This is a great game changer for dinner or lunch, when you need a change from the norm. Great to make for all year round but especially great for those chilly and cold nights. Chicken is a great metabolic food, and with these added vegetables, you are turning this into a meal that will surely increase the activity of your digestion, and thus increasing your metabolism.
