Homemade Breaded Chicken Sandwich

 
Gadgets and cooking needs: Baking pan, Cutting board, Toaster
Ingredients: 
  • Chicken breast- Trimmed, Cleaned and 1 cut into slices serves one or two if cut thin makes up to 4 pieces (2 for each sandwich)
  • Eggs- 1 beaten 
  • Bread Crumbs-1 cup-It will  make a difference which brand and flavor you use. I used Kraft's Shake n' Bake Extra Crispy, sometimes I choose Buffalo (spicy) Flavored, among others, pick your favorite. 
  • Parsley- 1 teaspoon optional for adding onto breadcrumbs
  • Hamburger Buns- if your having trouble finding Gluten Free, or wheat, I use Hawaiian Buns which provide lots of that sweet bread flavor instead of plain white bread. 
  • Cheese- I always choose Mozzarella over others because I found it in a metabolic foods list, two slices.
  • Onions-sliced thin rounds, either red or white
  • Vinegar-1 tablespoon, I use red wine, but choose your favorite, add 2 more for your salad
  • Lettuce- 3 leaves are enough for one sandwich, Romain or other or more for a side salad
  • Tomatoes- 2 Slices or more for your side salad
  • Cucumbers- 2 Slices or more "
  • Reduced Fat Mayonnaise- 1 tablespoon
Directions:
Heat up oven to 400 degrees. Meanwhile beat egg in a bowl/ and layout bread crumbs to use on a cutting board or plate and mix with parsley* (*on metabolic foods list). Coat the chicken in egg and then coat each side with bread crumbs, and set aside. Tip: Prepare chicken 15 minutes prior to cooking or leave in oven unturned until it's ready to take out in order to keep the breadcrumbs from flaking off.
Place chicken on a baking pan or sheet, and leave for 20 minutes. During last minute add Mozzarella to melt over the chicken.
        5 minutes right before your about to take out the chicken, wash and cut your vegetables and add the vinegar to taste ( add more veggies and sprinkle some olive oil and now it's ready for a side salad of  lettuce, tomatoes, onions and cucumbers) Tip: to keep vegetables crispy, always make the salad last, maybe 5 minutes before your about to serve food.
        Toast the breads and spread Reduced fat Mayonnaise, then add your choice of the vegetables, I usually pile them on high with 3 leaves of lettuce, then Tomatoes, then onions. Take out chicken from the oven and add onto the pile. Cover with the top Bun and press down to hold together. Enjoy with your favorite healthy sides, avoiding processed and deep fried foods. Great for the whole family!




Homemade Chicken Sandwich

So this is my 5th entry welcoming the Spring with a chicken sandwich that will have McDonald's running for their money. What's better than creating a sandwich that is truly customized to your taste and "having it your way..For real..."
This sandwich will get your metabolism on high and is great to make all year round; but best on those days you don't want to sweat over your stove. Enjoy it with a salad, pickles, coleslaw, for a healthier alternative to French Fries. Pack on the greens, and onions if you like for that extra serving of greens that your body craves.
