Three Cheese Gourmet Wafers with Guacamole, Cheddar cheese and Roasted Red Peppers


 
 
Gadgets and cooking needs: Cutting board, cutting knife and spreading knife, plate or tray for serving
Ingredients: Serves one or two
  • 15-20 Rutherford and Meyer gourmet wafers made in New Zealand available at Walmart, Giant Food stores or purchase online
  • 1 cup ready made Wholly Guacamole, (store in the freezer if there is still some left in the package and heat in the microwave for 30 seconds at a time twice or so, checking in between)
  • 1 Roasted red peppers in a Jar, cut in bite sized pieces as shown
  • 4-5 slices of Sharp reduced fat cheddar cheese (as we are going for the healthiest version)
  • Dash of Black ground pepper optional
Method:  On a cutting board cut the Roasted red pepper and the Reduced Fat Cheddar cheese into bite sized pieces that will fit onto the wafers and leave on the side. Place wafers on a cutting board or plate and spread about 1/2 teaspoon of the guacamole onto the wafers, leaving a nice bulk to insert the remaining ingredients into. Start placing on the pieces of reduced fat cheddar on all of them and then the roasted red peppers for last. Dash some ground black pepper (optional)for some extra zing and serve on a plate or tray. Enjoy!
 

 
 
In searching for a low-fat snack, I found these - versatile Three cheese Rutherford & Meyer Gourmet Wafers which beat most of the competition when it came to Trans Fat and Saturated Fat = 0! Total Fat = 1 gram which is really good. With each being only 40 calories I made a plate for the entire day and placed it in the fridge to munch on them all afternoon. It's especially a great idea for women when it's that "time of the month" and you really don't want to be over a stove, or snacking on fatty foods. Roasted red Peppers are great for boosting your metabolism and getting your dose of vegetables in an elegant way. Make this for welcoming guests at a gathering or feed it to that someone special on date night over some Sherry or your favorite wine before dinner.
