Salsalito Turkey Salad with Chipolte Sauce Dressing


Change up your lunch or even have a lighter dinner with this South West style Salad
 
 
Gadgets and cooking needs: cutting knife, large salad bowl, Mixing Spoon, grater for Cheese, paper towels
Ingredients: Serves one or two
  • 6-8 leaves of Romain Lettuce is one of my favorite, adding a touch of fancy to your meal
  • 3-4 cold cut slices of Salsalito Turkey your choice of mild or hot found at your local deli
  • 3-5 tablespoons of Chipolte Sauce (dressing) from "Market Side" found in cooling stations at your supermarket
  • 1/2-1 cup of Grated Reduced fat Cheddar cheese (remember we are going for the healthier version)
  • Corn chips of your choice, I used "Harvest" corn chips really compliment the meal
  • Side of a small red, orange or yellow sweet peppers for the sweet and spicy approach (optional)
Directions: After washing the lettuce, make sure all of the water is drained, you may use a pasta sifter or some paper towels will do the trick. Meanwhile grate the reduced fat cheddar cheese if it's not done already. Cut the Salsalito turkey into small bite sized squares as shown in the pictures.
Put everything in a mixing bowl leaving the dressing for last and mix until the lettuce is evenly coated with the dressing. Serve with your choice of corn chips and if you like a sweet and spicy approach add some sweet red, yellow or orange peppers.

You might have already seen the Ham and Cheese version of this salad posted on this site, and there are many other complimentary cold cuts to this Chipolte salad dressing I used from "Market Side"; and so here I show you another, Hot Salsalito Turkey. This is one of my Summer meal favorites, never leaving me weighed down, and so easy to make without working up a sweat. The Hot spices from the Salsalito turkey and the mild hot from the Chipolte really wake up your taste buds and your metabolism. Enjoy it with some corn chips and some sweet yellow, orange, or red peppers to really make this a tasty treat even for those hesitant to eat their vegetables. Serve it for lunch or even for a lighter dinner, better yet, take it to a picnic, or the park with some cool beverages to wash it down.
