Post Thanksgiving BBQ Turkey & 2 Grilled Cheeses Sandwich




Gadgets and cooking needs: Cutting board, knives, spatula, frying or saute pan
Ingredients: Serves one
  • 1.3 cup of Roasted Turkey (I used post Thanksgiving turkey)
  • 2 slices of Honey Whole Wheat bread
  • 2 teaspoons 4C Grated Parmesan cheese
  • Grated 1/4 cup of Reduced fat Cheddar cheese
  • 1/2 slice of Red Onions diced into small pieces
  • Dash or pinch of Cayenne Pepper
  • 2 tablespoons "I can't believe it's not butter"
  • 1 1/2 tablespoon Sweet Baby Rays BBQ Sauce (1 tablespoon Honey Mustard Sauce on the side for dipping optional)                                                                                                                                                                               Method: So easy to make in 15-20 min. including prep time
 Grate the cheeses, and dice the onions as directed above. After shredding the turkey, heat it up in a microwave for 1 minute or a saute pan in medium heat for 4 minutes (making sure the pan is preheated). Set aside in a bowl. Add the dash of Cayenne Pepper or any other spice you wish, the BBQ Sauce and if you like the onions, and the grated Parmesan cheese and stir all of the ingredients together. Heat up a frying or saute pan only under medium low heat Tip:too hot will burn the bread and not melt the cheddar properly.
 
Prepare the sandwich for "grilling" by placing the grated cheddar cheese on both breads as shown, or you may choose to top the turkey with the cheese so that when you bring it together nothing spills out. Melt all of the butter and spread it around the pan, then taking half of it out and putting it in a measuring spoon for later. Place sandwich in the pan and allow to cook for 5 minutes on each side.
 
 
Use the spatula to lift the sandwich from the pan in between those 5 minutes to avoid it from sticking, as well as press down firmly to bring it all together.  This is where you add more butter if necessary and do the same thing for the other side making sure to use the remainder of the butter for the other side. After it's a nice golden color on both sides and the cheeses are completley melted you are ready to serve!
