Zesty Lemon-Herb Salmon

This is my fourth entry for "sending away the winter" series which is also a great main dish all year long. I recommend you have it with steamed or even grilled vegetables, maybe just corn on the cob or a nice green salad. This is a good starting point if you or somebody else, normally don't like fish (but know you need to eat it) because it does not have a heavy smell or fishy taste to it. I only take it out straight from the freezer when it's ready to defrost so the fish smell does not contaminate the other foods. The lemon zest will surely have you licking your fingers, I know did! The Lemon Zest gravy that comes out of this is especially delicious with potatoes.

Tools: Frying pan for sauté
Serves 2




Ingredients:
  • Salmon- 2 pieces (may serve 2 people)
  • Lemons- 1 whole lemon
  • Garlic- 6 cloves, ground or smashed
  • Cilantro and or Parsley- 1 teaspoon
  • Olive Oil or I can't believe it's not butter- 2 tablespoons
Directions: Heat up the oil in the pan to a medium high flame.  Meanwhile smother salmon with lemon juice squeeze, Garlic, and Cilantro. Reduce the flames to medium low and add the salmon, allow to sauté for about 5 minutes on each side. To make more "gravy", add 2 tablespoons of "I can't believe it's not butter". Increase flames back to medium high and allow the fish to become crispy for the last few seconds.
Serve with your favorite healthy side avoiding processed foods.
