Cayenne & Lemon Oven Roasted Chicken

 
 
Served with Potatoes Au Gratin


Gadgets and kitchen needs: Pan large enough for Roasting a chicken, cutting board for meat
Knife for cutting chicken, cooking scissors
 
Ingredients:
  • 1 whole chicken cleaned,and fat trimmed
  •  
  • Marinade consist of: 1 tablespoon Cayenne Pepper
  • 1 lemon squeezed
  • 4 tablespoons Extra Virgin Olive Oil
  • 3 tablespoons of Ground Garlic (3 cloves smashed into a paste)
  • 1 teaspoon of Rosemary or Thyme (optional)
 1/2 Chopped or sliced Onions (optional)
 
Method:
 After the chicken has been cleaned and trimmed. (to know how YouTube offers several videos on how to prep a chicken for cooking) Cut the chicken into it's pieces for easier cooking and turning
 
Pre-Heat the oven to 375 degrees
Prepare the marinade in a cup using all of the ingredients shown above
Place the chicken in cooking pan
Soak the chicken with the marinade making sure to spread it out evenly with a spoon or cooking brush
You may add chopped or sliced  onions around it. (optional)
Now it's ready to cook, and leave it in the oven for 60. minutes basting it in between with it's juices. Tip: During the last five minutes set your oven to broil and this will give your chicken a nice toasty crunch on the outside.
 
Serve it with cornbread and any of your favorite sides!
