"Wholesome" Mushroom and Sweet Red Pepper Quesadilla

Highly recommended with Chipotle Sauce
 
Great Summer treat! No hot kitchen, and easy to make.
 

Tortillas are believe it or not the best selling wheat item of America and with so many varieties to choose from, it has become easier to pick one that is packed with nutrition and "wholesome". I chose a whole wheat Tortilla for my Mushroom and Roasted Red Pepper Quesadilla.  So easy to make you can have your family help you make it for some quality time.


Kitchen Gadgets and appliances: Oven, baking tray of any material, cheese grater (if necessary) cutting board for vegetables, cutting knives for vegetables.

Prep these Ingredients
  • Your choice of Tortilla, 2 for each Quesadilla
  • Already made guacamole at the produce aisles at your supermarket, one package for each
  • Portobello Mushrooms, Washed, and cut into slices  
  • 2 Pre-made Roasted Red Peppers in a Jar, diced(recommended metabolic ingredient)
  • Weight Watchers Mexican shredded Cheese
  • Onions diced optional (recommended metabolic ingredient)
  • 1/4 cup of Shredded Lettuce optional
Notes: You may choose to include Salsa,  Black peppers or any other of your favorite condiment that would compliment this Mexican dish.  You may also use Sweet Red Peppers ( not Roasted) cut into small pieces.



Method: Heat your oven to 400 degrees, meanwhile
After you have prepped the ingredients as shown above,; Take out two Tortillas and place them on your baking pan. Add Guacamole to tortillas as if you are spreading butter on them. Add a handful of shredded cheese on top of both, and start to layer the rest:

Mushrooms, Roasted Red Peppers and another layer of cheese. Place in heated oven for about 3-4 minutes. Take the Baking pan out of the oven and bring the tortillas together to form a pizza shape and cut with a pizza cutter into four and serve with your favorite iced tea.
