Delish Portobello Mushroom & Roasted Red Pepper Sandwich
This is a sandwich you can make for lunch, heat up in the microwave for 15-30 seconds (enough so that the bread does not get rubbery) and it will taste as good as when you first made it, an excellent option for lunch or dinner; especially if your need to take lunch to work.
Gadgets and kitchen Appliances: Toaster or Toaster oven, Saute or frying pan,stirring spoon or spatula, paper towels, cutting board for vegetables, cutting knife for cheese (if not using shredded)
Ingredients:
- Handful of Portobello Mushrooms,(or any other of your favorite mushrooms) sliced washed in cold water and set to dry on a paper towel (in a sifter optional)
- 3 tablespoons of Soy Sauce
- 1 tablespoon of Olive Oil or corn oil
- 2- cut Sweet Roasted Red Peppers from a Glass Jar
- Your favorite Gluten Free Bread- Whole wheat or any other - I used an Italian style Kaiser Roll
- 1 slice or two of your favorite cheese, Mozzarella cheese- is a metabolic food! yea! or I used reduced fat cheddar cheese
Meanwhile
Heat a saute or frying an to medium low(5 on most settings) add Olive Oil or Corn Oil. Add Portobello Mushrooms (Rinse and drained) Stir for 30 seconds under heat to separate evenly and add Soy Sauce into Mushrooms, and marrying flavors together, after flavor is evenly spread add Sweet Red Peppers. Let them sit under the flames and Bring Mushrooms to a crisp toast for about min. under the heat. Meanwhile prepare your bread in the toaster oven.
