Lemon Herb Zest Oven Roasted Chicken

Gadgets and needs: Deep dish to hold chicken whole marinating, Baking pan or glass, cutting board, butcher knife, basting tube or a ladle, whisking tool
Ingredients:
- 6-10 Garlic cloves mashed,
- use 1-tbs of Adobo seasoning instead of salt to mash Garlic in a Pillar.
- 1/2 cup of cooking wine, red preferred for color
- 1cup Chicken Stock
- 1 pkg. of McCormick Chicken Gravy
- 1/2 an Onion Sliced or diced
- 1/4 cup Extra Virgin Olive Oil
Instructions: Pre-heat oven to 350 Degrees. Assuming you have already marinated the chicken in lemon juices as described above, now Season the chicken by coating it all over with Olive Oil, Garlic w/Adobo(shown in ingredients) , a brilliant basic seasoning; making sure to even coat the inside and underneath the wings
Stuff the chicken with the Onions you chopped up, leaving some around the chicken.
Fill a baking pan w/ 1 cup of the chicken stock, and place chicken in pan, now ready to cook in the oven.
Careful not to burn the wings or let the skin stick to the pan, by turning it every 15-20 minutes and basting the juices over the chicken . (35-45 minutes in total)
In the last 15-20 minutes add Red wine onto chicken coating it as much as possible.
Now leaving the oven open still, and the 1pgk. of McCormick chicken Gravy, carefully whisking until it turns into a gravy and baste the chicken one last time,( you may blend the powder with the wine in a separate cup, but you still need to whisk it) and close the oven. For the last five minutes, Change oven setting to high broil for a quick crisp browning of the skin. Make sure to check to see if it is thoroughly cooked using a thermostat or simply cutting it right down the middle to make sure there is no pink meat and it's all white, and continue cooking of needed. Serve with any sides, here I served it with my own white rice, buttered corn and a green salad with raw carrots.
This is one of my all time favorite chicken dishes which I modified for even more flavor and gravy. This finger licking good recipe will probably be a staple in your home. I try to find Tyson or other all natural brands of Whole chickens that contain no harmful hormones and are raised as naturally as possible. I have worked for Boston market and can tell you that this is basically their original chicken recipe, but improved for a homemade taste. Good to make all year round but especially great for those cold or chilly nights. You may bake it, or if you like throw over a wood, or coal burning grill. Please make sure your chicken is thoroughly cooked before serving.
